The Ultimate Maui Itinerary: 8 Days in Paradise with Customizable Options

I love putting together custom itineraries for friends and family. It’s actually one of the main reasons I started this blog. Living on Maui, I’m lucky to call this island home, and I’m always excited to share my favorite places and experiences.
This guide is all about giving you options. It’s flexible, low-pressure, and designed to work with your interests, energy level, and budget.
Some people say itineraries kill spontaneity, but I think the right one can actually give you more freedom. When you know your options, it’s easier to relax and enjoy the moment (and not waste time figuring it all out on the fly).
The structure of this itinerary is simple: adventure in the morning, relaxation in the afternoon, but don’t feel bound to it. Sleep in, linger at brunch, or spend a whole day beach-hopping; it’s your trip.
You’ll see a mix of guided tours and DIY ideas throughout, but nothing here is a must-do. Maui has tons of free and low-cost things to explore, with or without a guide.
This itinerary includes 8 full days (not counting your arrival or departure), but it’s super easy to adjust for a shorter or longer trip. Plus, it includes plenty of ideas for your next visit (because let’s face it, you’ll want to come back!).

Day 1: South Shore Part 1 — Kihei

A mix of adventure, relaxation, and dining on Maui’s sunny south side.

Kick off your day on the water!

Explore Molokini Crater, a crescent-shaped volcanic atoll located about 2.5 miles off Maui’s southern coast, known for its crystal-clear waters and protected marine environment.

🐋 Option C: Whale Watching Boat Tour (December to April)

A family-friendly beach with shaded grassy areas, picnic tables, and gentle waves for swimming.

A quieter, uncrowded beach perfect for swimming and long walks on soft sands.

- 808 Deli: Known for their delicious sandwiches. Try the “Porkie” or Chicken Pesto Panini.
- South Maui Fish Company: Delicious poke bowls and fresh seafood.
- Paia Fish Market: A no-frills spot offering generous portions of fresh seafood at reasonable prices.
EVENING
Wrap up your day with a memorable dinner or a local event.
🍽️ DINNER OPTIONS:
- South Maui Gardens Food Trucks: A vibrant community hub with over a dozen food trucks, tropical gardens, cute shops and cafes, picnic tables, and outdoor games. They also host a fun events like hula shows, concerts, and comedy nights.
- Maui Brewing Co.: Visit Hawaii’s largest brewery for craft beer and island-inspired dishes in an open-air, laid back atmosphere.
- Coconuts Fish Cafe: Two locations, a laid-back restaurant known for its award-winning fish tacos and fresh seafood plates, great for takeout.
- Cool Cats Cafe: A retro-style diner serving up hearty burgers and classic milkshakes.

🎊 Alternative Activity: If it’s the fourth Friday of the month, check out the Kihei Town Party. It’s a fun street party with live music, food trucks, and local vendors. Great way to get a feel for the community and meet some locals.

Day 2: Road to Hana

Explore Maui’s lush east side with cascading waterfalls, black sand beaches, and delicious banana bread on this full-day adventure.
SUNRISE TO SUNSET
Set out early on the iconic Road to Hana, one of Maui’s most scenic drives. To make the most of your journey, download a guide app, like GuideAlong or Shaka Guide, for insights and turn-by-turn directions.
There are too many beautiful things to count on this drive. While every stop has its charm, here are some of the most popular ones:
- Twin Falls: Begin your journey with a refreshing swim beneath picturesque waterfalls. This is one of the easiest waterfall(s) to access but skip it if you plan to visit during your ‘North Shore Day’ listed below.
- Ke’anae Peninsula: Take a short detour to this rugged lava rock coastline. While there, savor a slice (or loaf!) of the famous banana bread at Aunty Sandy’s—fresh, warm, and buttery, it’s a true Road to Hana tradition.
- Ke’anae Arboretum (free) or Garden of Eden: Immerse yourself in Maui’s botanical beauty at one of these locations. Both showcase tropical flora, including rainbow eucalyptus trees and native plants, but choose one to save time for other stops.
- Upper Waikani Falls (Three Bears): Snap a photo of this stunning triple-tiered waterfall or carefully take a short path down for a closer view.

- Pua’a Ka’a State Wayside Park: Stretch your legs at this small park with accessible trails, waterfalls, swimming holes, picnic tables, and restrooms.
- Coconut Glen’s: Indulge in vegan coconut ice cream made from locally sourced ingredients. This colorful roadside gem is perfect for a mid-afternoon treat.
- Wai’anapanapa State Park: Marvel at the black sand beach, sea caves, and dramatic coastline of this stunning park. Reservations are required, so plan ahead!

- Wailua Falls: A quintessential Hawaiian waterfall located right off the road, making it a perfect photo stop.
- Pipiwai Trail & Oheo Gulch (Seven Sacred Pools): These famous hikes take you through towering bamboo forests and past cascading waterfalls, showcasing the best of East Maui’s natural beauty.

🍽️ LUNCH & DINNER OPTIONS:
Plan your meals along the way with one of these delicious local stops:
- Braddah Hutts BBQ Grill (closed weekends): An-all time local and visitor favorite, this food truck is known for its next-level plate lunches with barbecue chicken, ribs, or fresh fish. Portions are generous and the setting feels quintessentially Hawaiian. Be sure to bring cash!
- Hana Farms Roadside Stand: Enjoy fresh, organic dishes made from local ingredients. Try their wood-fired pizzas or hearty sandwiches.
- Thai Food by Pranee: Delicious, authentic Thai food. Their drunken noodles and any of their fish dishes are fantastic!
EVENING
Some visitors stay overnight in Hana to fully embrace its slower pace and have more time to explore.
If you plan on heading back, relax and take with you the unforgettable sights, sounds, and stories of the Road to Hana as you return to your accommodations.
Day 3: Northwest Maui — Kapalua & Napili

Combine adventure, coastal beauty, and gourmet dining in this incredible region of Maui.
MORNING
Start your day exploring the stunning coast, whether by water, land, or from above.
🤿 Option A: Snorkel Honolua Bay (May to October)
Discover one of Maui’s top snorkeling spots, a marine sanctuary teeming with vibrant coral reefs and tropical fish. Confident swimmers can reach the reef directly from shore, or opt for a boat tour for easier access.

👣 Option B: Kapalua Coastal Trail (2 hours)
Hike along this 1.75-mile (one way) trail to soak in packed with epic scenery—cliffs, beaches, lava rocks, tide pools, the works.
Tip: For a quick bonus adventure, head to Makaluapuna Point (Dragon’s Teeth) to see striking lava formations that resemble jagged fangs.
⛰️ Option C: Kapalua Ziplines (3 hours)
For thrill-seekers, soar above valleys and ridges on this popular zipline tour. You can ride side-by-side with a friend, cross Hawaii’s longest suspension bridge, and even take an ATV to get to the launch points.

- The Gazebo: Try their famous macadamia nut pancakes and fried rice! To avoid waiting in a long line, I recommend going for brunch instead of breakfast.
- The Plantation House at Kapalua Golf: Treat yourself to an upscale breakfast with panoramic views of the ocean and the award-winning Plantation Golf Course.
- Baya Bowls (grab-n-go): A popular food truck that makes fresh, filling acai bowls and smoothies loaded with local fruit and crunchy toppings.
AFTERNOON
Relax and soak up the sun on one of Maui’s iconic beaches.

A picturesque cove with calm waters perfect for swimming, paddleboarding, and relaxing on soft sands.
🏝️ Option B: Kapalua Bay
Another postcard-perfect cove with a gentle surf and easy-access snorkeling.

- Joey’s Kitchen: Delicious Filipino dishes with a Hawaiian twist. I recommend trying their garlic chicken, braised short ribs, or bbq kalbi ribs!
- A’A Roots (vegan): A creative, plant-based menu that has buddha bowls, sandwiches, and yummy smoothies.
- Grab-n-Go: Stop by Honolua Store for a quick bite and snacks or Island Vibes Cafe for acai bowls and breakfast burritos.
EVENING
End your day enjoying a delicious meal paired with a breathtaking west coast sunset.
🍽️ DINNER OPTIONS:
- Merriman’s Kapalua: Upscale farm-to-table dining with unbeatable sunset views.
- Sea House Restaurant: Dine oceanfront at Napili Bay with a menu full of fresh seafood and Hawaiian-inspired dishes. They also have a great happy hour menu.
- Miso Phat Sushi: A casual BYOB sushi spot. The TNT Roll and Rainbow Roll are fan favorites. I always get the hamachi kama; a must-try for those who love a flavorful, crispy fish dish.

Day 4: Upcountry — Makawao, Kula, & Haleakala

Upcountry Maui has a special kind of magic…cooler air, sweeping views, and a slower pace that invites you to linger.
There are just so many great spots to explore, it was tough to narrow them down. With morning, afternoon, and evening options, you probably won’t get to everything, just pick what fits your timing and go with the flow.
MORNING
⛰️ Option A: Haleakala Summit Sunrise + Hiking (~3 AM start)
Begin your day with a stunning sunrise from the top of Haleakala volcano, a once-in-a-lifetime experience that requires an early start and a reservation. Afterward, stretch your legs on the White Hill Trail (0.4 miles) for panoramic views or challenge yourself on the Sliding Sands Trail, a mesmerizing hike into Haleakala’s crater.
🛍️ Option B: Explore Makawao Town
Stroll through this historic paniolo town. It has lots of wonderful boutique shops, art galleries, and cozy cafes.
Some favorite shops are: Komoda Bakery, Viewpoints Gallery, The Maui Cookie Lady, and Hot Island Glass.
🐴 Option C: Horseback Ride at Triple L Ranch (~3 hours)
Saddle up for a horseback ride along the beautiful slopes of Haleakala. Afterwards, savor a hearty burger at Bully’s Burgers, made from all natural beef raised right on the ranch.
🥾 Option D: Hike in Makawao Forest Reserve
Enjoy a cool, shaded hike in Makawao Forest Reserve along the Kahakapao Trail. While it doesn’t have expansive views, it’s peaceful escape surrounded by eucalyptus and pine trees.
🥭 Alternative (Saturday only): Upcountry Farmer’s Market
Browse Maui’s largest farmer’s market (and my favorite) for locally grown produce, fresh-caught fish, tropical flowers, Maui-grown coffee, raw and vegan prepared foods, local art, and other homemade goods. It’s a great place to meet locals and grab a hot meal from vendors or nearby food trucks.

🍽️ BREAKFAST OPTIONS:
- Komoda Bakery: Over 100 years old, this local institution is known for its irresistible cream puffs, stick donuts, and guava malasadas.
- Freshies Maui: Enjoy a hearty, farm-to-table breakfast in their charming courtyard under a beautiful coral tree.
- Grandma’s Coffee House: A laid-back café in Kula serving house-roasted coffee, fresh pastries, and comforting breakfast options.
- Kula Lodge Restaurant: Dine in one of their garden gazebos to get sweeping views of Maui.
Update (August 2025): Sadly, the Kula Lodge Restaurant was destroyed in a fire on August 11, 2025. The owners plan to rebuild, and its lodge and marketplace remain open.
AFTERNOON & EVENING
⛰️ Option A: Haleakala Hiking + Summit Sunset + Stargazing
Experience Haleakala’s dramatic landscapes with a hike along White Hill Trail or the more strenuous Sliding Sands Trail. Stay for a spectacular sunset at the summit (no reservation required), followed by some of the best stargazing you’ll ever experience.
🛍️ Option B: Explore Makawao Town
Stroll through Makawao to explore its paniolo culture, charming galleries, and boutique stores. Don’t miss Viewpoints Gallery for expertly curated local art, The Maui Cookie Lady for chunky cookies, and Hot Island Glass to watch live glassblowing demonstrations.
🍹 Option C: Ocean Vodka Farm & Distillery
Visit this stunning 80-acre farm where vodka is crafted from organic sugarcane and deep-ocean mineral water. After a tasting, settle in for a sunset dinner on their expansive lawn with sweeping views of the island.
🍷 Option D: Ulupalakua Ranch + MauiWine (closed Mondays)
Take a scenic drive to MauiWine for a pineapple wine flight and some light bites. Then head across the street to Ulupalakua Ranch Store for some mouthwatering burgers.

🍽️ DINNER OPTIONS:
If you still have some time, end your day with a memorable meal at one of these standout restaurants:
- Ocean Vodka Farm and Distillery: This is a laid-back spot with killer views of the island, great cocktails (try the lilikoi crush), and tasty eats (get the wild mushroom farmbread, trust me). And to top it off, there’s often live music in the afternoons.
- Kula Bistro (BYOB): Enjoy a delicious dinner at this local favorite. It’s BYOB, so grab a beverage from the grocery store across the street to pair with your meal.
- Hali‘imaile General Store: Indulge in farm-to-table dishes at this popular restaurant set in a charming plantation-style building. Since Maui Gold Pineapple Farm is just down the road, their signature pineapple upside-down cake is as fresh and flavorful as it gets. Definitely save room for dessert.
- Mahalo Aleworks: Grab a wood-fired pizza from Marlow, beer from the bar, and head to the brewery’s second floor for stunning sunset views.

Day 5: West Side — Ka’anapali & Lahaina

A mix of iconic beaches, shopping, and amazing oceanfront dinner spots.

- Maui Coffee Attic: A cozy café with eclectic décor, chill atmosphere, and great lattes. Plus enjoy live music jams on their patio most mornings.
- Takamiya Market (grab-n-go): A historic mom-and-pop shop open since 1946, selling a wide selection of ready-made foods, bentos, local snacks, and sweet treats.
AFTERNOON
Spend your afternoon exploring Wailuku’s old charm or relax at a beautiful nearby farm.

Experience the charm of Wailuku by wandering through its colorful boutiques, art galleries, and unique shops like Request Music, a beloved record store.
🌴 Option B: Maui Tropical Plantation (closed on Mondays)
Great for families—enjoy ziplining, a tram tour, or a farm-fresh meal at Cafe O’Lei. Take in the stunning views of Waikapu Valley while strolling the grounds, and don’t forget to visit the Kumu Farms Country Market for souvenirs and locally made goods.

- Costco Food Trucks: This popular food truck park has two locations across the street from Costco with a wide variety of affordable, tasty options.
- My Thai Maui: A quirky, warehouse-style spot serving up bold, flavorful Thai food, everything from classic Pad Thai to Northern Thai specialties.
- Kalei’s Lunchbox: A local favorite for generous plate lunches and island-style comfort food.
- Tamura’s Market (grab-n-go): A grocery store serving up the best poke on the island! The ahi poke is always great, but try the scallops or pipikaula as well!
- Tin Roof (grab-n-go): Celebrity chef Sheldon Simeon’s wildly popular takeout spot serving elevated Hawaiian comfort food. You can order ahead online to skip the line.
🎉 Alternative Activity: If it’s the first Friday of the month, check out Wailuku First Friday Town Party, a lively street festival with live music, food trucks, vendors, and local shops.

Day 7: South Shore Part 2 — Wailea & Makena

Snorkel, unwind at luxurious beaches, or indulge in a spa day, followed by world-class dining or an iconic Hawaiian luau.
MORNING
Start your day with a choice of snorkeling at one of these beautiful shore spots:
- Ahihi-Kinau Natural Area Reserve: Protected marine area known for its crystal-clear waters teeming with marine life.
- Ulua & Mokapu Beaches: Ideal for beginner snorkelers, with calm, clear water and easy entry from the shore.
- Turtle Town (Makena Landing/Five Graves): Often included in Molokini Snorkel Boat Tours, this spot is a popular haven for Hawaiian green sea turtles. Snorkel directly from the shore at Makena Landing to catch glimpses of these majestic creatures in their natural habitat.

🍽️ BREAKFAST OPTIONS:
- Ka’ana Kitchen: This upscale restaurant has what some consider the best breakfast buffet on the island, indulge in a wide range of delicious dishes.
- Akamai Coffee: For a more casual start, this cafe serves premium Hawaiian coffee blends and fresh pastries.
AFTERNOON
Spend your afternoon relaxing on the beach, exploring a scenic coastal walk, or indulging in a luxurious spa day.

Stretch out on the golden sands of Wailea Beach, then take a leisurely stroll along the Wailea Beach Walk and soak in the views.
🏝️ Option B: Big Beach (Makena State Park)
Spend the afternoon at one of Maui’s largest and most beautiful beaches. Relax on the soft sand or take a scenic walk along the shoreline.
Note: This beach is known for its strong shore break and rip currents so just be cautious when going for a swim.
🧖♀️ Option C: Kilolani Spa at Grand Wailea
Indulge in a rejuvenating massage or facial at Hawaii’s largest spa. Then enjoy access to saunas, hydrotherapy pools, cold plunges, and a Hawaiian-inspired Hamman.

- Baldwin Beach Park: Family-friendly with shaded picnic areas, restrooms, and a wide sandy shore perfect for lounging or swimming.
Note: The surf can get high during the winter months, so be cautious if going for a swim.
For families with young children, Baby Beach at the park’s west end has a calm, protected cove that’s ideal for little ones.
